Ingredients
  

  • 2 cups cauliflower chopped
  • 2 cups broccoli chopped
  • 1 cup red cabbage chopped
  • 1 cup carrots chopped
  • 1-1/2 cups fresh parsley chopped
  • 2 celery stalks chopped
  • 1/2 cup raw almonds chopped
  • 1/2 cup raw sunflower seeds
  • 1/3 cup organic raisins
  • For the Vinaigrette:
  • 3 Tbsp olive oil
  • 1/2 cup lemon juice
  • 1 tablespoon fresh ginger peeled and grated
  • 2 tablespoons clover honey
  • 1/2 teaspoon sea salt

Method
 

  1. Step 1: Prepare the vegetables. Using a sharp knife or a food processor, finely chop the cauliflower, broccoli, red cabbage, carrots, parsley, and celery. If using a food processor, pulse the vegetables individually a few times until they are finely chopped but not mushy.
  2. Step 2: Combine the salad ingredients. In a large bowl, combine the chopped cauliflower, broccoli, red cabbage, carrots, parsley, celery, almonds, sunflower seeds, and raisins.
  3. Step 3: Prepare the vinaigrette. In a mason jar, combine the olive oil, lemon juice, grated ginger, honey, and sea salt. Seal the lid tightly and shake vigorously until the ingredients are well combined. Alternatively, you can whisk the ingredients together in a small bowl.
  4. Step 4: Dress the salad. Pour the vinaigrette over the salad and toss gently to coat all the ingredients evenly.
  5. Step 5: Chill (optional). For best results, refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
