Ingredients
  

  • For the Soup Base:
  • 5-2 tsp gochugaru Korean chili powder, adjust to taste for desired heat
  • 1 tbsp minced garlic
  • 2 tsp sugar adjust to taste
  • 2 tbsp neutral cooking oil such as avocado, sunflower, or grapeseed oil
  • 5 tbsp soy sauce adjust to taste
  • 1 tsp dark mushroom soy sauce
  • 2 tbsp Chinese black vinegar Chinkiang vinegar
  • 25 tsp ground white pepper
  • 5 tsp toasted sesame seeds
  • For the Dumplings and Noodles:
  • 8 frozen dumplings vegetable, pork, or your preferred type
  • 1 portion wheat noodles about 60g per serving, such as udon, ramen, or egg noodles
  • To Finish:
  • 5 cups hot water from the pot
  • 2 tsp sesame oil
  • For Topping:
  • Chopped green onions or coriander
  • Crispy fried shallots optional

Method
 

  1. Step 1: Prepare the Soup Base Ingredients
  2. Gather all the ingredients for the soup base. Measure out the gochugaru, minced garlic, sugar, soy sauce, dark mushroom soy sauce, Chinese black vinegar, white pepper, and sesame seeds. Having everything prepped and ready to go will make the cooking process smoother and more efficient.
  3. Step 2: Mix the Dry Ingredients
  4. In a heatproof bowl, combine the gochugaru (or chili powder), minced garlic, and sugar. This mixture will form the base of the spicy and savory flavor profile. Make sure the bowl is heatproof, as you'll be pouring hot oil over it.
  5. Step 3: Prepare the Dumplings and Noodles
  6. Take the frozen dumplings out of the freezer and set them aside. Prepare your noodles of choice. If using dry noodles, measure out one portion (about 60g). If using fresh noodles, ensure they are ready to be cooked.
  7. Step 4: Chop the Toppings
  8. Chop the green onions or coriander for topping. If you’re using crispy fried shallots, have them ready as well. Fresh toppings add a burst of freshness and flavor to the finished dish.
